Salmon Patties

6 oz. Canned Salmon (I use Wild Planet brand salmon)
2 Tbls diced onion
2 Tbls diced red bell pepper
1 Tbls plus 1 tsp coconut flour
2 eggs
1/2 tsp of dried dill
Salt and pepper to taste
1 Tbls coconut oil for frying
Drain and flake salmon.
Add all other ingredients except oil.
Form 1 or 2 patties and set aside.
Heat oil in skillet and add patties.
Fry 3-4 minutes on each side til browned.
Shown here served with raw zucchini ribbons and a little red bell pepper.
Yields: 2 - 3 1/2" patties.
