Slow Cooker Beef Stew With Spinach



Ingredients:
1 lb sirloin tip steak (or stew meat)
2 Tbls coconut oil
2 cups trimmed fresh green beans
1 large sweet potato, peeled and cubed
1/2 onion, diced
2 lbs crushed fresh tomatoes, with juice
2 cups beef bone broth (homemade or not!)
1 clove garlic, minced
1/2 tsp chili powder
1/4 tsp cumin
Red pepper flakes (optional)
Salt and pepper to taste
2 cups loose packed baby spinach

Directions:
Heat a large skillet and brown the beef and onions for a few minutes in the oil.
Add beef, onions and all other ingredients to the slow cooker EXCEPT the salt and pepper, and spinach.
Set your slow cooker on high for 4 hours.
When done, taste and add salt and pepper to taste.
Add the spinach just before serving and quickly stir it around in the stew, the heat will wilt the spinach.
