Easy Egg Roll in a Bowl

1 lb ground pork (or chicken or beef or left over diced meat)
1 large bag cole slaw mix (or a bag of broccoli slaw!)
1 red onion, chopped
2 carrots, chopped and shaved
1/2 lb mushrooms, sliced
3 cloves garlic, minced
1 tbls sesame oil
1/2 tsp fish sauce
1/4 cup coconut aminos
1 tsp ginger, minced
1 bunch chopped green onions
Melt 1 TBLS of your favorite and fry 1 lb ground pork in a large sauté pan.
While the pork is cooking, place the coleslaw mix or broccoli slaw into a mixing bowl.
Add 1/2 lb mushrooms, 1 diced red onion, the shaved carrots, and the minced garlic to the mixing bowl.
Whisk together the tbls sesame oil,  fish sauce, coconut aminos and fresh minced ginger.
Add vegetables and sauce mixture to wok and stir to combine.
Cook until onions are translucent and cabbage has wilted- about 5 minutes.
Garnish with chopped green onions or jalapeños!
