Easy Egg Roll in a Bowl

1 lb ground turkey (or chicken or beef or left over diced meat)
1 large bag coleslaw mix (or a bag of broccoli slaw!)
1 small red onion, chopped
2 carrots, chopped and shaved
1/2 lb mushrooms, sliced
3 cloves garlic, minced
1 Tbls sesame oil
1/2 tsp Red Boat fish sauce
1/4 cup coconut aminos
1 tsp fresh ginger, minced
1 bunch chopped green onions

Melt 1 Tbls of your favorite fat (ghee, coconut oil or avocado oil) and fry 1 lb ground turkey in a large sauté pan.
While the meat is cooking, place the coleslaw mix or broccoli slaw into a mixing bowl.
Add 1/2 lb mushrooms, 1 diced red onion, the shaved carrots, and the minced garlic to the mixing bowl.
Whisk together the tbls sesame oil,  fish sauce, coconut aminos and fresh minced ginger.
Add vegetables and sauce mixture to saute pan and stir to combine.
Cook until onions are translucent and cabbage has wilted- about 5 to 10 minutes.
Garnish with chopped green onions or jalapeños!
4 servings.
